What is Cebu lechon?

Cebu lechon is a whole pig seasoned from the inside with herbs — lemongrass, garlic, onion and scallion — and slow-roasted over charcoal until the skin turns glass-crisp. It is so flavorful it needs no dipping sauce.

Did the Spanish bring lechon to the Philippines?

Not the dish — only the word. Filipinos were roasting whole pigs over fire long before Spanish contact. The Spanish contributed the name lechón (their term for a suckling pig). The roast is pre-colonial; the label is borrowed.

Why doesn’t Cebu lechon need a sauce?

Because the flavor is built into the meat. The cavity is packed with herbs before roasting, seasoning the pig all the way through, so it stands on its own and you can eat it with no sawsawan at all. The traditional partner, when used, is seasoned vinegar (suka) on the side — not the liver-based sauce of Luzon.

What’s the difference between Cebu and Manila lechon?

What is cebuchon?

Cebuchon is the nickname for lechon belly — a boneless pork-belly roll roasted so every slice is skin-and-meat, with no bones to carve around.

What is lechon de leche?

A smaller, young suckling pig. The skin is more delicate and the meat especially tender, which suits smaller gatherings.

Is Cebu lechon roasted over charcoal or in an oven?

Traditionally over charcoal on a bamboo or stainless-steel spit — the method that built Cebu’s reputation. Some modern roasters now use large ovens for consistency, but charcoal is the classic.

Is there bamboo or metal used for the spit?

Both. The pig is trussed onto a long spit, traditionally bamboo and in modern setups food-grade stainless steel - not galvanized steel, since zinc-coated metal is not food-safe in contact with the acidic, salted meat. The spit lets the pig turn evenly over the coals.

How much lechon do I need per person?

Pigs are sold by live weight, and a reliable rule of thumb is about half a kilo of live weight per guest, with whole pigs running from roughly 11 to 30 kilograms. Live weight is not all edible: the internal organs (laman loob) and blood are removed when the pig is cleaned, and the roast itself drives off moisture and renders out fat, so a pig ends up at a little under half its live weight. After eating it on camera, the late chef called it the best pig he had ever had — a verdict that put Cebu’s herb-stuffed, no-sauce style on food maps worldwide.

How do I keep the crackling crisp?

Serve it soon, don’t cover it tightly (trapped steam softens skin), and re-crisp gently with high, dry heat if needed. More in why the skin crackles.

What can I do with leftover lechon?

The classic is paksiw na lechon — leftover lechon simmered in vinegar, garlic and spices into a savory-sour stew. Lechon also makes excellent fried rice and sisig.

Can I get real Cebu lechon outside Cebu?

Yes. Cebu-style lechon is roasted to order and delivered in Metro Manila. For Greater Metro Manila there are roasters who deliver to order; this independent guide endorses no single seller.

How far ahead should I order?

Because good lechon is made to order, a few days’ lead time is wise — roughly 72 hours is a safe window for whole pigs, especially around fiestas and holidays.

Do you eat Cebu lechon with vinegar?

You can eat it without any sawsawan because the meat is so flavorful on its own. Traditionally, though, it is served with seasoned vinegar (suka) on the side to complement the meat and cut the richness.
